The Fast Budget Dinner Plan – Turkey & Green Bean Casserole
This is another one of those mystery recipes that I found in some random book that was super complicated and involved a large amount of preparation. I really liked the outcome but hated all the prep. I worked the recipe down to this simple yet effective dinner option. It is fast, the kids like it, and the husband eats it so it’s a winner in my book.
Turkey (or chicken) and Green Bean Casserole
Serves 4-6
1-2 cups of Turkey and/or chicken
1 can cream of mushroom soup
1 can green beans, drained
1 cup shredded cheddar cheese
1/2 cup milk
4-6 serving Instant Mashed potatoes, make beforehand
Mix meat, soup, beans, cheese, and milk in a casserole dish. Microwave until bubbly, usually 3-5 minutes. Spread mashed potatoes on top of mixture and microwave for an additional 2-3 minutes. Spoon and serve!
I promise it is really that easy. The hardest part of this recipe is making the mashed potatoes beforehand. This is a great “after thanksgiving” meal when you have all those leftovers. Rotisserie chicken works great too!
Some changes you can make:
– Replace green beans with whatever veggie is on-hand
– Ditch the cheese if you want no cheesiness though I have been guilty of stepping up the cheesiness in this dish.
