The Fast Budget Dinner Plan – Chicken and Rice

We are a busy working family. Between work and events, we are often left struggling with a dinner plan. Since we are living on a budget, we need to watch our spending. Most of the time, a quick meal out is not an option. I am going to share with you a dirty little secret. It is our quick meal plan to have dinner on the table in less than 5 minutes. Yes, it is possible. I am not sure where this meal came from. Maybe we created it, maybe it was fed to us before – who knows. What I do know is that this has become our emergency meal of choice. Heck, this is so ingrained in our heads that we don’t even have to say it out loud. Get your pencils ready…

EZ Chicken n Rice
Serves 4-6

1 can Campbells (or any brand really) condensed mushroom soup
1 can Tysons chicken breast in water, drained
2-4 cups Instant Rice (we use Trader Joes Frozen Jasmine Rice)

Dump the soup and drained chicken into a pot and heat until bubbly. While mixture is cooking, make instant rice according to package.

Spoon hot mixture over cooked rice…YOUR DONE!

Want to get really fancy? Add peas to your cooking mixture to add a little something extra to the recipe.
Want to add more richness? Add some cream cheese to the mixture while cooking
Need more mixture? Add a little milk to thin it out

The possibilities are endless. Use this as your “emergency dinner” and stop with spending money at restaurants. Whip up a home cooked meal and enjoy some time with the family.
